Gluten Free Polvorones by Sara Godbey - Mi LegaSi

Following a Paleo or gluten free diet doesn't mean you have to deprive yourself! This delicious recipe by Latina mom Sara Godbey is sure to please even the most skeptical.

These Polvorones are gluten free, grain and dairy free. They do have cane sugar, but you can easily substitute for coconut or maple sugar.

  • 1.5 cups of Cassava Flour. I prefer Otto’s Cassava Flour

  • 1.5 cups of raw cane sugar, maple sugar or coconut sugar

  • 1/4 tsp of aluminum free baking soda

  • 2 tsp of organic orange oil

  • zest of 2 big oranges

  • 2/3 cup of lard at room temperature or shortening. Here I really recommend you use lard, it gives polvorones their traditional flavor. Trust me.

  • Powdered sugar for dusting

Mix all ingredients using a standing mixer or a hand held mixer. If the dough seems too dry keep mixing until a ball forms. If it is still too dry, you can add a splash of maple syrup. Do not add water! Water will make them chewy and gummy.

Form dough into balls or crescents and bake for 15 min at 350F. Do not over bake since they can become too hard. Even if they seem a bit soft when you pull them out of the oven, they will harden a bit once cooled down.

Polvorones need to be soft and dusty!
